Patient with chronic fungal infection and rash inside of roof of mouth

I would like to know if anyone has had a patient with chronic fungal infections.  I have a current patient who is a mother of 3, fairly high stress level, dealing with a red rash on the roof of her mouth for the past year.  Steroids, antibiotics are not correcting this problem.  She has constant bloating, difficulty digesting food, pain and cramping when eating, and she has had a fungal infection under one finger nail for 3 years and under a toenail for 6 years.
what are your thoughts?  Thinking about running the parasite test from Parasites.com, or the Pro7 test from Fagron to find the root cause of this.

not sure how to proceed.
